Cheese on Toast with a twist
This is simple and delicious and especially good when it is cold outside, you are studying and need to take a break. Even better if you can get someone else to make it for you.
Just take some cheese (cheddar, low fat cheddar, jarlsberg – any firm and undistinguished packet cheese you have in the fridge – don’t waste your good ones on this, though you could use up old ends of mystery cheese), grate it, mix it with finely chopped fresh green chilli, finely chopped coriander, some cumin seeds and a little black pepper and pile onto lightly toasted (unbuttered) bread on a foil lined tray and put it under the grill (broiler). You should try and take the cheese right to the edges so the bread doesn’t burn before the cheese gets nice and golden. It will spill over, but the foil will save you from having to pan-scrape.
If you wanted to, you could replace the fresh green chilli with dried red chilli, replace cumin seeds with a little ground cumin or ajwain (wild thyme) seeds, add a little chopped leftover chicken or ham, add some finely sliced spring onions, put some tomato slices under the cheese… There are many variations. All of them need to be nice and brown, cut into triangles and served with a hot cup of tea. No coffee please, we’re Indianish!
